&amp;nbsp;Since the first kick-start (Jan 1-21, 2010), I have eaten some dairy, but in general, it has been organic dairy from grass-fed cows, not factory farmed dairy. &amp;nbsp;That's really my concern about dairy anyway.&lt;br /&gt;&lt;br /&gt;The Physician's Committee for Responsible Medicine is kicking off the kick-start again March 1st. &amp;nbsp;Yippee! &lt;br /&gt;&lt;br /&gt;Also, we've decided to keep eating vegan for now. &amp;nbsp;There are several vegetarian (not vegan) items in the fridge from three weeks ago that we will use up, rather than waste.&lt;br /&gt;&lt;br /&gt;I'm excited for this new adventure in my life! I don't know if that link will be valid forever, but here are a few of the recipes I did cook.&lt;br /&gt;&lt;br /&gt;&lt;h1&gt;Couscous Confetti Salad&lt;/h1&gt;Makes about 8 1-cup servings&lt;br /&gt;&lt;em&gt;Couscous is pasta from northern Africa that cooks almost instantly and makes a beautiful and flavorful salad. Whole-wheat couscous is sold in natural food stores and some supermarkets. &lt;/em&gt;&lt;br /&gt;1 &lt;sup&gt;1&lt;/sup&gt;/&lt;sub&gt;2&lt;/sub&gt;                            cups                                      dry whole-wheat couscous                   &lt;br /&gt;2                            cups                                      boiling water                   &lt;br /&gt;3            - 4                                    green onions, finely chopped, including tops                   &lt;br /&gt;1                                              red bell pepper, seeded and finely diced                   &lt;br /&gt;1                                              carrot, grated                   &lt;br /&gt;1            - 2                    cup                   finely                  shredded red cabbage                   &lt;br /&gt;&lt;sup&gt;1&lt;/sup&gt;/&lt;sub&gt;2&lt;/sub&gt;                              cup                   finely                  chopped fresh parsley                   &lt;br /&gt;&lt;sup&gt;1&lt;/sup&gt;/&lt;sub&gt;2&lt;/sub&gt;                              cup                                     golden raisins or chopped dried apricots                   (I used dried cranberries!)&lt;br /&gt;1                                                 juice of 1                  lemon                   &lt;br /&gt;&lt;sup&gt;1&lt;/sup&gt;/&lt;sub&gt;4&lt;/sub&gt;                              cup                                     seasoned rice vinegar                   &lt;br /&gt;1                              tablespoon                                     olive oil                   &lt;br /&gt;1                              teaspoon                                     curry powder                   &lt;br /&gt;1 &lt;sup&gt;1&lt;/sup&gt;/&lt;sub&gt;2&lt;/sub&gt;                            teaspoons                                      salt                   &lt;br /&gt;&lt;br /&gt;In a large bowl, combine couscous and boiling water. Stir to mix, then cover and let stand until all the water has been absorbed, 5 to 10 minutes. Fluff with a fork. &lt;br /&gt;&lt;br /&gt;Add green onions, bell pepper, carrot, cabbage, parsley, and raisins or apricots.  &lt;br /&gt;&lt;br /&gt;In a small bowl mix lemon juice, vinegar, oil, curry powder, and salt. Add to salad and toss to mix. Serve at room temperature or chilled.&lt;br /&gt;&lt;br /&gt;I really loved this couscous salad!&amp;nbsp; This recipe was a huge batch that lasted several days.&lt;br /&gt;&lt;br /&gt;&lt;h1&gt;Carrot and Red Pepper Soup&lt;/h1&gt;Makes  4 1 1/2-cup servings&lt;br /&gt;&lt;em&gt;&lt;/em&gt;&lt;br /&gt;1                                              onion, chopped                   &lt;br /&gt;6                                              carrots, thinly sliced                   &lt;br /&gt;2                            cups                                      water or vegetable stock                   &lt;br /&gt;2                                              red bell peppers                   &lt;br /&gt;2                            cups                                      soymilk                   &lt;br /&gt;2                            teaspoons                                      lemon juice                   &lt;br /&gt;2                            teaspoons balsamic vinegar&lt;br /&gt;&lt;sup&gt;1&lt;/sup&gt;/&lt;sub&gt;2&lt;/sub&gt;                              teaspoon                                     salt                   &lt;br /&gt;&lt;sup&gt;1&lt;/sup&gt;/&lt;sub&gt;4&lt;/sub&gt;                              teaspoon                                     freshly ground black pepper                   &lt;br /&gt;&lt;br /&gt;Place onion and carrots into a pot with water or stock and simmer, covered, over medium heat until the carrots can be easily pierced with a fork, about 20 minutes.&lt;br /&gt;&lt;br /&gt;Roast bell peppers by placing them over an open gas flame or directly under the broiler until the skin is completely blackened. Place in a bowl, cover, and let stand about 15 minutes. Slip the charred skin off with your fingers, then cut the peppers in half and remove the seeds.&lt;br /&gt;&lt;br /&gt;Blend the carrot mixture along with the bell peppers in a blender or food processor in several small batches. Add some of the soymilk to each batch to facilitate blending. Return to the pot and add lemon juice, vinegar, salt, and black pepper. Heat until steamy.&lt;br /&gt;&lt;br /&gt;&lt;h1&gt;Blueberry Buckwheat Pancakes&lt;/h1&gt;Makes  16 3-inch pancakes&lt;br /&gt;&lt;em&gt;In this recipe, buckwheat and blueberries team up to make a terrific-tasting, health-protecting breakfast.&lt;/em&gt;&lt;br /&gt;&lt;sup&gt;1&lt;/sup&gt;/&lt;sub&gt;2&lt;/sub&gt;                              cup                                     buckwheat flour                   &lt;br /&gt;&lt;sup&gt;1&lt;/sup&gt;/&lt;sub&gt;2&lt;/sub&gt;                              cup                                     cornmeal                   &lt;br /&gt;&lt;sup&gt;1&lt;/sup&gt;/&lt;sub&gt;2&lt;/sub&gt;                              teaspoon                                     baking powder                   &lt;br /&gt;&lt;sup&gt;1&lt;/sup&gt;/&lt;sub&gt;4&lt;/sub&gt;                              teaspoon                                     baking soda                   &lt;br /&gt;&lt;sup&gt;1&lt;/sup&gt;/&lt;sub&gt;4&lt;/sub&gt;                              teaspoon                                     salt                   &lt;br /&gt;1                                              ripe banana, mashed                   &lt;br /&gt;2                            tablespoons                                      maple syrup                   &lt;br /&gt;1                              tablespoon                                     vinegar                   &lt;br /&gt;1                              cup                                     fortified soy- or rice milk                   &lt;br /&gt;1                              cup                   fresh or frozen                  blueberries                   (I used cocoa powder instead!)&lt;br /&gt;1                                                                   vegetable oil spray                   &lt;br /&gt;&lt;br /&gt;Mix buckwheat flour, cornmeal, baking powder, baking soda, and salt.   &lt;br /&gt;&lt;br /&gt;In a separate large bowl, combine mashed banana, maple syrup, vinegar, and non-dairy milk. Add flour mixture, stirring just enough to remove any lumps and make a pourable batter. Stir in blueberries and add a bit more milk if the batter seems too thick. &lt;br /&gt;&lt;br /&gt;Preheat a non-stick skillet or griddle, then spray lightly with vegetable oil. Pour small amounts of batter onto the heated surface and cook until tops bubble. Turn carefully with a spatula and cook the second sides until browned, about 1 minute. Heat the Smart Balance spread over medium heat in a large skillet and sautee the onion for 2 minutes. &amp;nbsp;Add the flour and garlic salt and sautee for 5 more minutes.&lt;br /&gt;&lt;br /&gt;2. Add the vege broth and cornstarch, stirring to mix the cornstarch well. &amp;nbsp;Bring to a boil, then reduce to a simmer, stirring frequently to make sure no clumps are formed.&lt;br /&gt;&lt;br /&gt;3. I really love making stir-fry recipes!  So simple, and I get to pretend I'm a major chef flipping the veggies in the air... :)&lt;br /&gt;&lt;br /&gt;This recipe comes from allrecipes.com like many of the recent ones have.  I find myself going to that page a lot!  Especially when I'm feeling creative!  I love that learning how to cook can be such a creative thing.&lt;br /&gt;&lt;br /&gt;The only alteration I made was to add tofu chunks, about two servings worth.  I love to stir-fry tofu!&lt;br /&gt;&lt;br /&gt;&lt;h2&gt;                             INGREDIENTS&lt;/h2&gt;                                                          &lt;ul&gt;&lt;li&gt;                                     1 tablespoon cornstarch&lt;/li&gt;&lt;li&gt;                                     1 1/2 cloves garlic, crushed&lt;/li&gt;&lt;li&gt;                                     2 teaspoons chopped fresh ginger root, divided&lt;/li&gt;&lt;li&gt;                                     1/4 cup vegetable oil, divided&lt;/li&gt;&lt;li&gt;                                     1 small head broccoli, cut into florets&lt;/li&gt;&lt;li&gt;                                     1/2 cup snow peas&lt;/li&gt;&lt;li&gt;                                     3/4 cup julienned carrots&lt;/li&gt;&lt;li&gt;                                     1/2 cup halved green beans&lt;/li&gt;&lt;li&gt;                                     2 tablespoons soy sauce&lt;/li&gt;&lt;li&gt;                                     2 1/2 tablespoons water&lt;/li&gt;&lt;li&gt;                                     1/4 cup chopped onion&lt;/li&gt;&lt;li&gt;                                     1/2 tablespoon salt&lt;/li&gt;&lt;/ul&gt;               &lt;h2&gt;                     DIRECTIONS&lt;/h2&gt;                                                           &lt;ol&gt;&lt;li&gt;&lt;span&gt; In a large bowl, blend cornstarch, garlic, 1 teaspoon ginger, and 2 tablespoons vegetable oil until cornstarch is dissolved. Mix in broccoli, snow peas, carrots, and green beans, tossing to lightly coat. &lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span&gt; Heat remaining 2 tablespoons oil in a large skillet or wok over medium heat. Cook vegetables in oil for 2 minutes, stirring constantly to prevent burning. Stir in soy sauce and water. Mix in onion, salt, and remaining 1 teaspoon ginger. The lovely recipe I found was a Tomato and Basil Quiche from my old fave, allrecipes.com.&lt;br /&gt;&lt;br /&gt;Here is the recipe:&lt;br /&gt;&lt;br /&gt;&lt;h2&gt;                             INGREDIENTS&lt;br /&gt;&lt;/h2&gt;                                                          &lt;ul&gt;&lt;li&gt;                                     1 tablespoon olive oil&lt;/li&gt;&lt;li&gt;                                     1 onion, sliced&lt;/li&gt;&lt;li&gt;                                     2 tomatoes, peeled and sliced&lt;/li&gt;&lt;li&gt;                                     2 tablespoons all-purpose flour&lt;/li&gt;&lt;li&gt;                                     2 teaspoons dried basil&lt;/li&gt;&lt;li&gt;                                     3 eggs, beaten&lt;/li&gt;&lt;li&gt;                                     1/2 cup milk&lt;/li&gt;&lt;li&gt;                                     salt and pepper to taste&lt;/li&gt;&lt;li&gt;                                     1 (9 inch) unbaked deep dish pie crust&lt;/li&gt;&lt;li&gt;                                     1 1/2 cups shredded Colby-Monterey Jack cheese, divided&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;&lt;h2&gt;                     DIRECTIONS&lt;/h2&gt;                                                           &lt;ol&gt;&lt;li&gt;&lt;span&gt;                             Preheat oven to 400 degrees F (200 degrees C). Bake pie shell in preheated oven for 8 minutes.                         &lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span&gt; Meanwhile, heat olive oil in a large skillet over medium heat. Saute onion until soft; remove from skillet. Sprinkle tomato slices with flour and basil, then saute 1 minute on each side. In a small bowl, whisk together eggs and milk. season with salt and pepper. &lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span&gt; Spread 1 cup shredded cheese in the bottom of pie crust. Layer onions over cheese, and top with tomatoes. Cover with egg mixture. sprinkle top with remaining 1/2 cup shredded cheese. &lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span&gt; Bake in preheated oven for 10 minutes. Reduce heat to 350 degrees F (175 degrees C), and bake for 15 to 20 minutes, or until filling is puffed and golden brown. Serve warm. &lt;/span&gt;&lt;/li&gt;&lt;/ol&gt;This was indeed a yummy recipe! I don't think "meat"balls are Irish at all, but so what!  I want to expand their palates!  I've been reading a blog by Gary Vaynerchuk lately - he talks about the importance of expanding people's palates in the wine realm by suggesting we constantly try new wines - and I think its super important to reduce habituation in food.  It's so easy to eat the same old things all the time; I know that! Store-bought vege nuggets, anyone??  --&gt;me&lt;-- :)  In any case, it's so exciting to try new recipes!  Here's to 52 new recipes this year! Cheers!&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;INGREDIENTS&lt;br /&gt;&lt;br /&gt;Meatballs:&lt;br /&gt;* 4 eggs&lt;br /&gt;* 1 cup shredded Cheddar cheese&lt;br /&gt;* 1/2 cup cottage cheese&lt;br /&gt;* 1/2 cup finely chopped onion&lt;br /&gt;* 1 cup finely chopped pecans&lt;br /&gt;* 1 teaspoon dried basil&lt;br /&gt;* 1 1/2 teaspoons salt&lt;br /&gt;* 1/4 teaspoon dried sage&lt;br /&gt;* 2 cups Italian seasoned bread crumbs&lt;br /&gt;&lt;br /&gt;Sweet and Sour Sauce:&lt;br /&gt;* 1/4 cup vegetable oil&lt;br /&gt;* 1/4 cup white vinegar&lt;br /&gt;* 3/4 cup apricot jam&lt;br /&gt;* 1 cup ketchup&lt;br /&gt;* 1/4 cup minced onion&lt;br /&gt;* 1 teaspoon dried oregano&lt;br /&gt;* 1 dash hot pepper sauce&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;DIRECTIONS&lt;br /&gt;&lt;br /&gt;1. Preheat the oven to 350 degrees F (175 degrees C).&lt;br /&gt;2. In a large bowl, mix together the eggs, Cheddar cheese, and cottage cheese    until well blended. Mix in 1/2 cup onion, pecans, basil, salt and sage. Stir in bread crumbs. Form the mixture into 2 inch balls, and place them in a 9x13 inch baking dish.&lt;br /&gt;3. In another bowl, whisk together the vegetable oil, vinegar, apricot jam, ketchup, 1/4 cup onion, oregano and hot pepper sauce. Pour over meatballs.&lt;br /&gt;4. Bake uncovered for 35 to 40 minutes in the preheated oven, until meatballs are firm, and sauce is thick and bubbly.&lt;br /&gt;&lt;br /&gt;Observations:&lt;br /&gt;&lt;br /&gt;It was fun to form the balls with my hands, although messy!  I rolled them in the sauce before baking to prevent them from sticking to the pan.  They stayed well-formed even after baking.  I used croutons instead of bread crumbs, and that worked fine; I just mashed them up a bit first.&lt;br /&gt;&lt;br /&gt;These turned out yummy!  My office was shocked that they looked so good but didn't have any meat in them!
